Funk up your greens!

Luckily, I enjoy vegetables so eating them isn’t a hardship for me.  However, I will say I tend to get bored and I like changing up the flavor profiles in my salads.  Just yesterday I made a kale salad with some add-ins to give it more of an Asian flair.

Here’s what I had:

Torn kale, diced red onion and cucumber, cashews and raisins

For dressing I did a drizzle of EVOO and some coconut aminos.  Massage the kale or simply toss…your choice.  Don’t be afraid to mix sweet and salty on your salads, it makes for a great combo.  Just make sure the majority of your salad is veggies and don’t go overboard on your high-calorie extras (like nuts and dried fruit).
